Main Ingredients

  • 2 bowls of freshly cooked rice (approx. 400g)
  • 10 preserved plums (Maaesil Jangajji), finely chopped (adjust to taste and size)

Rice Ball Seasoning

  • 3 Tbsp plum extract (Maesil Cheong)
  • 2 tsp salt (adjust to your preference)
  • 1 Tbsp toasted black sesame seeds (optional)

Cooking Instructions

Step 1

Start by preparing the rice. Use freshly cooked rice that is still warm and slightly fluffy. In a bowl, combine the warm rice with 3 tablespoons of plum extract and 2 teaspoons of salt. If you like, add 1 tablespoon of toasted black sesame seeds for extra flavor and visual appeal. Gently mix the ingredients with a spatula or spoon, ensuring the seasoning is evenly distributed without mashing the rice grains. It’s best to let the rice cool slightly before handling to avoid burning your hands.

Step 1

Step 2

Take a portion of the seasoned rice, about a handful, and place it on your palm. Make a small indentation in the center and add 1-2 tablespoons of the finely chopped preserved plums. Ensure the pits have been removed from the plum pickles. Cover the filling with the rice, then gently cup your hands and roll the mixture to form a compact, round rice ball. For smaller, bite-sized balls perfect for children, use less rice.

Step 2

Step 3

Now, it’s time to give these rice balls a delicious golden crust. Heat 1-2 tablespoons of cooking oil in a non-stick pan over medium heat. Once the oil is shimmering, carefully place the formed rice balls into the pan. Roll them gently and continuously in the hot oil, ensuring all sides are evenly browned and slightly crispy. Adjust the heat as needed to prevent burning. Once they achieve a nice golden color, remove the rice balls and place them on a paper towel-lined plate to drain any excess oil.

Step 3

Step 4

Finally, arrange the beautifully pan-seared rice balls on a serving plate. Drizzle a little Okonomiyaki sauce (or Teriyaki sauce for a similar sweet and savory flavor) over the top in a zigzag pattern. This adds a wonderful layer of flavor that complements the rice and pickles. For an authentic touch, sprinkle some katsuobushi (bonito flakes) on top. Your delicious and visually appealing plum pickle rice balls are now ready to be enjoyed!
