The combination of chewy mushrooms and crisp bell peppers is simply divine! This recipe uses oyster sauce to create a quick and flavorful vegetable stir-fry that’s perfect as a side dish or a light meal.
Main Ingredients- Bell peppers (use a variety of colors if possible)
- Carrot (about 1/3)
- Oyster mushrooms (or your favorite mushrooms)
- Onion (1/2)
- Chives (a small handful)

Cooking Instructions
Step 1
First, wash and prepare all your vegetables. Slice the bell peppers, carrot, and onion into uniform pieces, about 0.5 cm thick. Cutting them to similar sizes ensures they cook evenly, resulting in a better texture. Trim the ends of the oyster mushrooms and tear them into bite-sized pieces.
Step 2
Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced onion and carrot and stir-fry. Starting with harder vegetables like carrots and onions helps to build a good base for the stir-fry. Continue to cook until the onion becomes slightly translucent.
Step 3
Once you notice a sweet aroma from the onions and they start to turn transparent, add the prepared oyster mushrooms to the pan. Stir-fry along with the other vegetables until the mushrooms soften and shrink.
Step 4
When the mushrooms are partially cooked, add the colorful bell peppers. Stir-fry quickly for about 1-2 minutes. It’s important not to overcook the bell peppers, as they will lose their delightful crispness and become soft. You want them to remain slightly crunchy!
Step 5
Now it’s time to season. Add 1 to 2 tablespoons of oyster sauce, depending on the amount of vegetables you have. If you don’t have oyster sauce, you can substitute with a mixture of soy sauce (1 part) and oligosaccharide or honey (0.3 parts). Alternatively, you can use soy sauce and sugar (or oligosaccharide) to taste. If the flavor needs a little boost, a pinch of salt will do the trick.
Step 6
Finally, add the chopped chives and stir-fry for just another moment to combine everything. Chives cook very quickly, so avoid overcooking to preserve their fresh, aromatic flavor.
