Step 1
Start with a ripe, fragrant mango. Locate the flat, large seed in the center. Position your knife parallel to the seed and slice down the larger sides of the mango, cutting it into three sections: two fleshy halves and the middle section containing the seed.
Step 2
Take one of the fleshy halves. Carefully score the flesh in a grid pattern (like a checkerboard) down to, but not through, the skin. Make both vertical and horizontal cuts to create uniform cubes.
Step 3
Gently push the skin from the underside of the mango half upwards. The scored flesh will pop outwards, resembling a blooming flower, making it easy to slice off the cubes or enjoy them directly. Repeat with the other half.
