  • 500g tteokbokki rice cakes
  • 1 stalk of green onion
  • 1/3 pack of instant ramen noodles

Spicy Sauce

  • 3 Tbsp hot pepper paste (gochujang)
  • 1 Tbsp red pepper powder (gochugaru)
  • 3 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 4 Tbsp corn syrup (oligosaccharide)
  • 5 cups water (using a paper cup as a standard measure)

Cooking Instructions

Step 1

First, prepare all the ingredients for your tteokbokki. Cut the fish cakes into bite-sized pieces and wash the green onion thoroughly before slicing it diagonally. Also, have about 1/3 of a ramen noodle pack ready. (Tip: Rinse the tteokbokki rice cakes in cold water to prevent them from sticking together.)

Take one stalk of green onion, wash it well under running water to remove any dirt or debris, and then slice it diagonally into pieces about 2-3 cm long. Slicing it this way will make it tender and add sweetness as the tteokbokki cooks.

Prepare 4 sheets of square fish cake and cut them into 2-3 pieces, similar in size to the tteokbokki rice cakes. Be careful not to cut them too small, as they might break apart in the sauce; aim for a moderate size.

Now, let’s make the spicy and sweet sauce that defines the flavor of tteokbokki! In a large bowl, combine 3 tablespoons of hot pepper paste, 1 tablespoon of red pepper powder, 3 tablespoons of soy sauce, 1 tablespoon of minced garlic, and 4 tablespoons of corn syrup for shine and sweetness. Mix everything together well. (Tip: If you like it spicier, you can increase the amount of red pepper powder or add finely chopped chili peppers.)

Simmer gently until the tteokbokki rice cakes are soft and the sauce has well coated them. Stir frequently to prevent sticking. The sauce will begin to thicken and become more concentrated.

Once the rice cakes and fish cakes are sufficiently cooked, add the 1/3 pack of ramen noodles. You can add a little more water if the sauce is too thick for the noodles to cook, or cook them directly if the sauce is still plentiful.
