Hello everyone! This is Henri’s Sister. Today, I made stir-fried shredded potatoes, a beloved classic side dish. Isn’t it the easiest and tastiest way to prepare potatoes? I don’t think anyone dislikes this dish! Growing up, my mom’s stir-fried potatoes were always gone too quickly, leaving me wanting more. So now, I make a generous portion for myself. This recipe is simple, delicious, and perfect for any meal!

Main Ingredients
  • 2 medium potatoes (about the size of a paper cup)
  • 2 medium onions (about the size of a paper cup)
  • A small amount of carrot (just enough for color)

Cooking Instructions

Step 1

First, wash the potatoes and onions thoroughly without peeling. Make sure to scrub off any dirt or debris.

Next, julienne the washed potatoes, onions, and carrot into similar thin strips. For stir-fried shredded potatoes, a slight stickiness from the starch makes them even more delicious. If you’re not comfortable with knife skills, a mandoline slicer can be helpful.

Step 3

Prepare a frying pan or wok. Add about 3 tablespoons of cooking oil (using a spoon for measurement) and heat it over medium-low heat before turning up the flame. Let the pan heat up sufficiently.

Once the oil is warm enough, add all the julienned potatoes, carrots, and onions to the pan.

Stir-fry the ingredients gently over medium-low heat to ensure the potatoes cook through without burning. Stirring by scraping the bottom of the pan with a spatula can prevent the potatoes from sticking.

To check if the potatoes are almost cooked, take out a strand and try biting into it. When they are tender, pour 1 tablespoon of soy sauce (spoon measurement) around the edges of the pan. My mother always used to add soy sauce this way when she cooked.

Letting the soy sauce caramelize slightly on the hot pan adds a wonderful depth of flavor to the potatoes. Continue to stir-fry until the soy sauce is well combined with all the ingredients.
