Main Ingredients
  • 200g fresh perilla leaf shoots
  • 150g low-sodium stir-fried anchovies

Seasoning Mix
  • 2 Tbsp soy sauce
  • 1 Tbsp plum extract (or syrup)
  • 1/2 Tbsp ginger concentrate (or minced ginger)
  • 1/2 Tbsp gochugaru (Korean chili flakes)
  • 1/3 Tbsp minced garlic
  • 1/3 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the perilla leaf shoots by trimming any wilted or damaged leaves. Rinse them thoroughly under running water to remove any dirt or debris, then drain them well.

Step 2

Heat a wide pan over medium heat. Add the drained perilla leaf shoots and stir-fry them briefly until they wilt. You don’t need to add any water; the shoots will release their own moisture as they cook. This step helps to remove any raw taste and tenderize the shoots.

Step 3

Add the low-sodium stir-fried anchovies to the pan with the wilted perilla leaf shoots. Toss them together quickly to combine.

Step 4

Now, add all the seasoning ingredients: soy sauce, plum extract, ginger concentrate, gochugaru, and minced garlic. Stir-fry everything briskly over high heat. It’s important to stir-fry quickly to prevent the sauce from burning and to allow the flavors to meld beautifully. Finish by drizzling in the sesame oil for a nutty aroma. Your delicious Perilla Leaf Shoot and Anchovy Braise is ready to serve!
