Once the water reaches a rolling boil, turn off the heat immediately. Cover the pot and let the bracken sit in the residual heat to soften. This method helps the bracken become tender.

After the water has cooled down completely, discard the soaking water. Rinse the bracken thoroughly under running water. Repeat this rinsing process several times until the water runs clear. Then, fill the pot with fresh water and let the bracken soak for about a day until it becomes plump and soft. (Tip: If you’re short on time, it’s much more convenient to buy pre-soaked bracken from a supermarket or market.)

The rehydrated bracken will be quite voluminous, likely over 1kg. Heat a generous amount of cooking oil or perilla seed oil in a pan over medium-low heat. Add the prepared bracken and sauté until it’s nicely cooked, allowing the moisture to evaporate and the flavors to develop.

Once the bracken is sautéed, add 2 tablespoons of minced garlic and continue to stir-fry until the garlic becomes fragrant. The pungent aroma of garlic will enhance the overall flavor of the bracken.

Add just enough broth or water to moisten the bracken. You don’t want too much liquid; just enough for it to simmer and absorb the flavors as it cooks down.
