Plain Rice Porridge (Juk)
How to Make Simple and Soothing Plain Rice Porridge
A gentle and easily digestible plain rice porridge, perfect for those recovering or with sensitive stomachs. This recipe offers comfort and nourishment.
Ingredients- 1 cup soaked rice (approx. 200g)
- 3 cups water (approx. 600ml)

Step 1
Rinse 1 cup of rice thoroughly and soak it in water for at least 30 minutes. In a pot, add 1/3 Tbsp of sesame oil and the soaked rice. Stir-fry over low heat until the rice grains become slightly translucent. Sautéing the rice grains prevents the porridge from becoming too watery and adds a subtle nutty flavor.
Step 2
Pour 3 cups of water into the pot with the sautéed rice and bring to a boil over high heat. Once boiling, reduce the heat to low. Cook, stirring frequently, until the rice grains have softened and broken down, creating a thick porridge consistency. If you prefer a thinner porridge, add more water (5-6 cups) or blend the cooked porridge in a blender for an extra smooth texture.
Step 3
Continue to stir the porridge regularly to prevent it from sticking to the bottom of the pot. Cook until the rice is fully broken down and the porridge reaches your desired thickness. Turn off the heat and serve. This plain porridge is often served without seasoning, but you can add a pinch of salt to taste, or serve it with a side of seasoned scallions (dal-lae jang) or soy sauce.
