Main Ingredients

  • 1 bunch fresh spinach (approx. 300g)
  • A pinch of salt for blanching water

Seasoning Ingredients

  • 1/4 Tbsp salt (or to taste, can substitute with soy sauce)
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, carefully wash the spinach under running water, being gentle with the roots, to thoroughly remove any dirt or debris. Trim any wilted or discolored leaves for a cleaner result. Bring a generous amount of water to a rolling boil in a pot, adding a pinch of salt. Once boiling, add the prepared spinach and blanch it for a very short time, about 30 seconds to 1 minute, just until it wilts. Be careful not to overcook, as it can become mushy.

Step 2

Immediately after blanching, transfer the spinach to a bowl of cold water to stop the cooking process and retain its vibrant green color. This also helps to keep the spinach crisp. Once cooled, gently lift the spinach from the cold water and squeeze out as much excess water as possible with your hands. Removing excess moisture is crucial for the seasoning to adhere well and prevent the dish from tasting watery.

Step 2

Step 3

Place the squeezed spinach in a mixing bowl. Add all the prepared seasoning ingredients: salt (or soy sauce), minced garlic, sesame oil, and toasted sesame seeds. Gently mix everything together with your hands, as if massaging the ingredients, until the spinach is evenly coated. Avoid mashing the spinach; the goal is to combine the flavors without breaking down the texture. Taste and adjust the seasoning if needed. Your delicious seasoned spinach is now ready to be served!
