Tteokbokki Ingredients

  • 2 handfuls of rice cakes (tteok) (approx. 200g)
  • 1 pack of fish cakes (eomuk) (150g)
  • 1 pack of Vienna sausages (approx. 100g)
  • 1 stalk of green onion
  • 2 Korean green chilies (optional, for spice adjustment)
  • 1/4 onion
  • A little sesame seeds (for garnish)
  • 2 cups water (400ml)

Spicy & Sweet Sauce

  • 1 Tbsp gochujang (Korean chili paste) (15g)
  • 1 Tbsp gochugaru (Korean chili flakes) (7g)
  • 1 Tbsp soy sauce (15ml)
  • 0.5 Tbsp oyster sauce (7.5ml)
  • 0.5 Tbsp minced garlic (5g)
  • 3 Tbsp oligosaccharide (30ml)
  • 1 Tbsp sugar (10g)

Cooking Instructions

First, to prevent sticking, thoroughly rinse the rice cakes (tteok) under running water. If the rice cakes are hard, soaking them in cold water for a while will make them softer. Cut the fish cakes into bite-sized pieces (triangles or rectangles). Slice the green onion diagonally, and julienne the onion. If you prefer a spicier dish, finely chop the Korean green chilies. Make 2-3 slits on the Vienna sausages; this not only makes them look more appealing when cooked but also helps them absorb the sauce better.

Now, let’s make the key component of delicious tteokbokki: the sauce. In a bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp soy sauce, 0.5 Tbsp oyster sauce, 0.5 Tbsp minced garlic, 3 Tbsp oligosaccharide, and 1 Tbsp sugar. Mix well to create the sauce. Pour 2 cups of water into a pot and add the prepared sauce. Stir to dissolve the sauce, then bring it to a boil over medium heat. Once the sauce is bubbling, add the prepared rice cakes and cook for about 3-5 minutes until the rice cakes are soft. The sauce will start to thicken as the rice cakes cook.

Once the rice cakes are cooked to your liking, add the fish cakes, Vienna sausages, julienned onion, and chopped green chilies to the pot. Reduce the heat to medium-low and simmer gently, stirring occasionally, to allow the flavors to meld. Continue to cook for another 5-7 minutes, or until the sauce has reduced and coated the ingredients nicely. It’s important to stir frequently to prevent sticking. Finally, add the diagonally sliced green onion and simmer for another moment until it’s slightly wilted. Your delicious tteokbokki is ready! Sprinkle some sesame seeds on top for an appealing finish.
