Ingredients- 200g ground pork
- 1 whole aged kimchi (muk eun ji)
- 1/2 block firm tofu
- 2 Cheongyang peppers
- 1/2 onion
- 1/4 leek
- 1 Tbsp homemade doenjang (fermented soybean paste)

Today, we’re making delicious wraps using aged kimchi, which pairs perfectly with pork! These are a fantastic dish that will have you reaching for extra bowls of rice.

First, let me introduce all the ingredients you’ll need for this recipe. Fresh and flavorful ingredients are key to a delicious dish!

Thoroughly wash the kimchi filling from the aged kimchi. Then, rinse it under running water several times. To reduce the saltiness and sourness, it’s important to soak the kimchi in cold water for at least 2 hours.

Once drained, gently squeeze out any excess water from the aged kimchi. Mix it with a little sesame oil and a pinch of sugar, massaging it well. This will enhance the kimchi’s savory flavor.

Finely mince or julienne the onion, leek, and Cheongyang peppers. Heat a pan with a little oil and sauté the prepared vegetables until fragrant. The sweetness and aroma of the vegetables will add wonderful depth to the dish.

Add the ground pork and the squeezed tofu to the pan with the sautéed vegetables. Stir-fry everything together. Mashing the tofu as you cook will help it blend seamlessly with the pork, creating a softer texture.
