Pork and Tofu Kimchi Stir-Fry
Super Simple Pork and Tofu Kimchi Stir-Fry with Pork Belly: Baek Jong-won’s Recipe!
A perfect dish to enjoy with soft tofu! Introducing Baek Jong-won’s style of pork and tofu kimchi stir-fry. It’s incredibly delicious and easy to make.
Main Ingredients- 1 block firm tofu
- 1 cup well-fermented kimchi, chopped
- 160g pork belly slices (daepae samgyeopsal)
- 0.5 cup (90g) water
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the onion. Diagonally slice the red chili pepper. Chop the green onion. Finely chop the carrot (about 1/5 cup) for color. If you like it spicier, you can add a chopped Cheongyang pepper. Chop the well-fermented kimchi into bite-sized pieces.
Step 2
Heat a frying pan over medium heat and add the pork belly slices. Cook until golden brown and slightly crispy. You can use other cuts of pork like shoulder or neck, but if using a leaner cut, add a little cooking oil to the pan before cooking.
Step 3
Once the pork belly is nicely browned, add 0.5 Tbsp of sugar and stir-fry. This caramelizes the sugar, adding a sweet and savory depth to the pork. Cook until you smell a sweet, toasty aroma, being careful not to burn the sugar.
Step 4
Pour in 0.5 cup (about 90g) of water. The water helps to meld the flavors and prevents the sauce from becoming too thick or salty.
Step 5
Add 1 Tbsp of gochugaru (Korean chili flakes) and the chopped kimchi. Stir-fry everything together until well combined. The fermented kimchi will add its characteristic tanginess and heat, creating a rich flavor base.
Step 6
Stir in 1 Tbsp of minced garlic and 2 Tbsp of soy sauce, and continue to stir-fry. It’s important to adjust the amount of soy sauce based on the saltiness of your kimchi. Taste as you go; if your kimchi is already very salty, you might want to use less soy sauce.
Step 7
Now, add the sliced onion and chopped carrot. These are added towards the end to retain some of their crisp texture. Stir-fry just until the vegetables are slightly tender but still have a pleasant bite.
Step 8
Turn off the heat. Add the chopped green onion and red chili pepper (and optional Cheongyang pepper if using). Stir everything together gently. The residual heat will cook the green onions and peppers perfectly, preserving their fresh flavors and vibrant colors.
Step 9
Finally, drizzle in 1 Tbsp of sesame oil and give it a final mix. This adds a wonderful nutty aroma and finishes the dish beautifully.
Step 10
Cut the tofu into bite-sized pieces. Arrange the tofu on a serving plate and top the pork and tofu kimchi stir-fry with a sprinkle of sesame seeds. Your delicious Pork and Tofu Kimchi is ready to be enjoyed! Serve warm with the tofu for a delightful meal.
