Salad Ingredients- 2 leaves Cabbage
- 1 bunch Chives (approx. 50g)
- 1 piece Fresh Ginseng (approx. 20g)
- 2 Cherry Tomatoes
Dressing Ingredients- 1/2 Cheongyang Pepper (seeds removed, finely minced)
- 1/6 Onion (finely minced)
- 1 tsp Dijon Mustard
- 1 tsp Mayonnaise
- 1 tsp Whole Grain Mustard
- 1 tsp Honey
- 1 tsp Lemon Juice
- 1/2 Cheongyang Pepper (seeds removed, finely minced)
- 1/6 Onion (finely minced)
- 1 tsp Dijon Mustard
- 1 tsp Mayonnaise
- 1 tsp Whole Grain Mustard
- 1 tsp Honey
- 1 tsp Lemon Juice
Cooking Instructions
Step 1
First, prepare the salad greens. Remove the tough core from the cabbage leaves and thinly slice them into shreds. To enhance crispiness, soak the shredded cabbage in cold water for about 10 minutes. Thoroughly wash the fresh ginseng to remove any soil, peel it, and then slice it into thin matchsticks. Cut the chives into approximately 5cm lengths.
Step 2
Wash the cherry tomatoes, remove their stems, and cut them in half. With these basic vegetable preparations complete, your salad is almost ready to assemble.
Step 3
Next, finely mince the ingredients for the dressing to add a burst of flavor. Finely mince the Cheongyang pepper after removing its seeds for a touch of spiciness. Mince the onion finely as well to bring out its natural sweetness and aroma in the dressing. The finer you mince these ingredients, the better they will meld with the dressing and the salad.
Step 4
Let’s make the delicious whole grain mustard dressing! In a bowl, combine the finely minced Cheongyang pepper and onion. Add 1 tsp of Dijon mustard, 1 tsp of mayonnaise, 1 tsp of whole grain mustard, 1 tsp of honey, and 1 tsp of fresh lemon juice. Whisk everything together gently with a whisk or fork until well combined. Your wonderful whole grain mustard dressing is now ready.
Step 5
Place the prepared salad vegetables (cabbage, chives) and halved cherry tomatoes into a mixing bowl. Add about two-thirds of the dressing you just made and gently toss to coat the vegetables evenly. If it tastes a little bland, you can add more dressing to adjust the seasoning to your preference.
Step 6
Now, for the final plating! Arrange the dressed salad mixture attractively on a serving plate. Top the salad with slices of golden-brown, pan-fried pork belly. Finally, artfully arrange the fresh ginseng matchsticks over the salad and drizzle with any remaining whole grain mustard dressing. Your ‘Pork Belly and Ginseng Salad’ is complete, packed with savory goodness and healthy ingredients. Enjoy this delightful dish for a revitalizing meal, especially during the changing seasons!
