  • Pork tenderloin 200g
  • Green onions (white parts) 1/2 stalk
  • Whole garlic cloves 3-4
  • 1 Egg
  • Zucchini 1/4
  • Chives 1/4 bunch
  • Shredded seaweed (gim) to taste
  • Somen noodles (for 2 servings)

Cooking Instructions

Step 1

First, prepare a deep and rich broth using pork tenderloin. In a pot, combine 1.5L of water, pork tenderloin, roughly chopped white parts of green onions, whole garlic cloves, and a pinch of black pepper. Bring to a boil over high heat, then reduce to medium-low and simmer gently for 20-30 minutes. This process helps to remove any gamey smell from the pork and fully infuse the broth with flavor. You’ll season with coarse sea salt later.

While the broth is simmering, remove the pork tenderloin and finely mince it. Aim for a texture that still has a slight bite rather than a paste. This minced pork will be used as a topping.

Prepare the toppings by slicing the zucchini and chives. Thinly julienne the zucchini. Heat a pan with a very small amount of oil over low heat and sauté the zucchini until slightly tender but still crisp. Don’t overcook, as you want to retain some texture. Finely chop the chives and set aside.

Make the egg garnish using one egg. Separate the yolk and white. Thinly pan-fry each separately to create egg crepes. Since it’s only one egg, you can cook them simultaneously in a small pan or one after the other. Once completely cooled, julienne them neatly.

Boil the somen noodles in plenty of water with a pinch of salt. Once the water comes to a rolling boil, add the noodles and stir immediately and continuously to prevent them from sticking together. Cook for about 3-4 minutes, then immediately drain and rinse thoroughly under cold running water. Washing them vigorously in cold water ensures the noodles are springy and won’t become mushy.

Now that all components are ready, let’s assemble the dish! Place the cooked somen noodles neatly in a deep bowl. Top with the minced pork, sautéed zucchini, chopped chives, and the julienned egg crepes (both yolk and white). Finally, sprinkle with shredded seaweed for a visually appealing presentation.

Lastly, prepare the seasoning paste to your liking. In a small bowl, combine gochugaru, sugar, minced garlic, soy sauce, chopped green onion, and ginger powder (if using). Mix well until combined. You can stir this paste into the hot broth or mix it with the noodles for an even richer flavor experience. Pour in the warm broth and enjoy your delicious meal!
