Don’t let leftover pork bulgogi go to waste! This recipe transforms a small amount of leftover pork bulgogi into an unexpectedly delightful tteokbokki. While I’ve made tteokbokki with beef bulgogi before, I never imagined using pork! However, the resulting flavor was astonishingly good. The savory and sweet pork, chewy rice cakes, and springy glass noodles create a perfect harmony that makes it impossible to stop eating. This pork bulgogi glass noodle tteokbokki, free from any gamey odor and bursting with umami, is highly recommended as a nutritious snack for children. Main Ingredients- Pork Bulgogi 2 cups (already cooked)
- Rice Cakes (Garaetteok) 5 pieces (approx. 250g)
- Water 2 cups (400ml)
- Glass Noodles 1 cup (soaked)
Seasoning- Oyster Sauce 1 Tbsp (15ml)
- Soy Sauce 2 Tbsp (30ml, adjust to taste)
- Honey 2 Tbsp (30ml, adjust to taste)
- Sesame Seeds (for garnish)
- Black Pepper (a pinch)
- Scallions (optional, chopped)
- Oyster Sauce 1 Tbsp (15ml)
- Soy Sauce 2 Tbsp (30ml, adjust to taste)
- Honey 2 Tbsp (30ml, adjust to taste)
- Sesame Seeds (for garnish)
- Black Pepper (a pinch)
- Scallions (optional, chopped)
Cooking Instructions
Step 1
First, prepare the rice cakes by cutting them into bite-sized pieces, about 2-3 cm long. If your rice cakes are hard, soak them in cold water for a short while before cutting.
Step 2
Soak the glass noodles in cold water until softened before you begin cooking. Soaking them for at least 30 minutes will ensure they are soft and springy in the tteokbokki.
Step 3
In a wide pot or wok, add the cut rice cakes. Pour in 2 cups (400ml) of water. Bring to a boil over medium heat and cook until the rice cakes soften. Stir occasionally to prevent them from sticking to the bottom.
Step 4
Once the rice cakes are tender, add the prepared pork bulgogi. Stir in 1 Tbsp oyster sauce, 2 Tbsp soy sauce, and 2 Tbsp honey. Taste and adjust the soy sauce and honey according to your preference. Mix everything well, then add the soaked glass noodles and cook together. Continue to simmer for about 5-7 minutes until the glass noodles are cooked and the sauce thickens slightly. Add a pinch of black pepper to remove any porky odors, and garnish with chopped scallions if desired.

Transfer the delicious pork bulgogi and glass noodle tteokbokki to a serving bowl. Sprinkle with sesame seeds for a final touch of flavor and visual appeal. Enjoy it while it’s warm!
