  • 1 whole fermented napa cabbage kimchi
  • 3 stalks green onions
  • 1 onion
  • 3-4 Korean chili peppers (Cheongyang peppers)
  • 3 Tbsp minced garlic
  • 6 Tbsp sugar (adjust based on kimchi’s sourness)
  • 2 Tbsp soybean paste (Doenjang)

Pork shoulder is a key ingredient that adds wonderful depth to kimchi jjigae. If you prefer a leaner cut, pork shoulder is an excellent choice. We’re using 3 geun (about 900g). Using a whole piece and slicing it yourself can help retain more of the delicious juices. You can also use pork neck or belly, but pork shoulder offers a great balance of meat and fat, making it ideal for this stew, especially for those who prefer less greasy dishes.

Cut the pork shoulder into bite-sized pieces, slightly smaller than your fist. This ensures a pleasant texture after simmering and prevents them from falling apart.

Chop 3 stalks of green onions into large pieces. The green onions will add a refreshing flavor and aroma to the stew, making the broth even more delightful.

If you do rinse it, consider adding a bit more gochugaru (red pepper flakes) and soy sauce to adjust the seasoning.

Cut the kimchi head vertically into 3-4 sections so it fits nicely in the pot and is easy to eat later. Place the prepared kimchi at the bottom of a large pot. Make sure your pot is generously sized, as the ingredients will expand during cooking.

Layer the large pieces of pork shoulder on top of the kimchi. I initially worried the pot was too small, but I quickly realized a larger pot was necessary! Always use a pot that is ample for the amount of ingredients.

Arrange the chopped green onions, sliced onion, and chili peppers attractively over the pork and kimchi.

Pour in enough water to cover all the ingredients generously. Adjust the water level based on the quantity of your ingredients.

Add 3 tablespoons of minced garlic. The pungent aroma of garlic will further enrich the flavor of the stew.

Stir in 6 tablespoons of sugar. This helps to balance the sourness of the kimchi. You can always add more later if needed, after tasting.
