You can substitute pork neck with pork shoulder, pork butt, or fresh pork belly for a delicious alternative. Choose your preferred cut and prepare it.

Wash all the vegetables for the curry (potatoes, carrots, onions, bell peppers, mushrooms) thoroughly. Chop them into bite-sized, square pieces. Potatoes and carrots can be cut slightly larger as they will cook down while the curry simmers.

To tenderize the pork neck steaks, gently pound them with the back of a knife or a meat mallet. This helps to break down the connective tissues, making the meat more tender.
