Potato and Sausage Pancakes: A Kid-Friendly Snack
Soft and Savory Potato Sausage Pancakes
I made a snack using potatoes and Vienna sausages, easily found ingredients. These potato sausage pancakes, made with kid-favorite sausages, are soft, savory, and offer a delightful potato texture. They’re perfect as a simple snack.
Ingredients- 1 Potato (medium-sized)
- 7 Vienna sausages
- 1 Egg
- 70g Pizza cheese
- A little cooking oil
- A little parsley flakes (optional)
Cooking Instructions
Step 1
First, peel the potato, wash it thoroughly, and then finely mince it. Using a food processor can yield a smoother texture. Also, remove the casing from the Vienna sausages and mince them to a similar size as the potato, or slightly smaller. If you prefer a bit more texture, you can mince them a little larger.
Step 2
In a bowl, crack one fresh egg and whisk it gently using chopsticks or a whisk until well combined. Ensure the yolk and white are fully incorporated.
Step 3
Add the finely minced potato and Vienna sausages to the bowl with the whisked egg. Mix everything together thoroughly with a spatula or spoon to create the batter. It’s important to mix well so the ingredients are evenly distributed and don’t clump together.
Step 4
Heat a pan over medium-low heat and add a generous amount of cooking oil. Spoon the batter onto the heated pan, forming round shapes. Spread them out evenly; they shouldn’t be too thick, ensuring they cook through properly.
Step 5
Once the bottom side turns golden brown and starts to cook, carefully flip the pancakes using a spatula. Cook the other side until it’s also golden brown. Be gentle while flipping to prevent the batter from breaking apart.
Step 6
After both sides are nicely browned, evenly sprinkle the pizza cheese over the cooked pancakes. Add a pinch of parsley flakes for extra aroma. Finally, cover the pan with a lid and cook on low heat until the pizza cheese is fully melted.
Step 7
Once the cheese has melted deliciously, carefully transfer the finished potato sausage pancakes to a serving plate. They taste best when served warm.
Step 8
Cut the pancakes into bite-sized pieces as desired. You can cut them into squares for children or into strips. Serving them with ketchup or mustard sauce can enhance the flavor.
