First, prepare your onion by thinly slicing it. Slicing it this way helps to release its natural sweetness when sautéed.

Peel the 3 potatoes and dice them into approximately 2cm cubes. Cutting them too small might cause them to break down too much, so aim for a bite-sized piece.

Place the diced potatoes on a microwave-safe plate and microwave for about 5 minutes. This pre-cooking step helps the potatoes become tender more quickly in the next stages.

In a pot over medium heat, melt the 20g of butter. Add the sliced onions, 4 pinches of salt, and 1 tsp of sugar. Sauté slowly for about 8-10 minutes until the onions turn translucent and develop a light brown hue. Be careful not to burn them; slow sautéing caramelizes the onions beautifully, bringing out their deep sweetness.

Once the onions are well-sautéed, pour in 400ml of fresh milk. Scrape the bottom of the pot to loosen any browned bits of onion and butter, incorporating all that delicious flavor into the milk.
