No need to worry on busy mornings! Here’s a recipe for nutritious pancakes packed with soft potatoes and sweet sweet potatoes. They’re also perfect as a special, healthy snack for children. They’re incredibly easy to make, so anyone can succeed in no time!
Basic Ingredients- Pancake mix 450g
- Potato 180g (approx. 1 medium)
- Sweet potato 150g (approx. 1 medium)
- Eggs 2
- Milk 70ml
- Butter 2 Tbsp (for cooking)

Step 1
Here are all the ingredients prepared to make delicious potato and sweet potato pancakes. Make them with care using fresh ingredients.
Step 2
Wash the potatoes and sweet potatoes thoroughly, keeping the skin on. Place them in a steamer or on a microwave-safe plate, cover with plastic wrap, and leave one corner slightly open to allow steam to escape. Microwave for about 4 minutes. It’s okay if they are not fully cooked, as they will cook further during the pan-frying process.
Step 3
Carefully peel the warm sweet potatoes and potatoes after removing them from the microwave. Use a tool if they are too hot to handle.
Step 4
Dice the peeled potatoes and sweet potatoes into uniform cubes of about 1 cm. This size ensures they mix well with the pancake batter and cook evenly.
Step 5
In a large bowl, pour in the pancake mix (450g). Add 2 fresh eggs and 70ml of milk for smooth pancakes.
Step 6

Step 7
Divide the prepared batter equally into two separate bowls. Add the diced sweet potatoes to one bowl of batter and the diced potatoes to the other. Gently mix to distribute the root vegetables evenly within each batter.

Melt 1 tablespoon of butter in a heated frying pan over medium-low heat. Pour half of the potato batter into the pan, spreading it into a circle about 1 cm thick. Be mindful of the heat to prevent burning.
Step 9
Once the bottom of the pancake is golden brown, carefully flip it with a spatula and cook the other side until equally golden. Ensure it’s cooked through to bring out the savory potato flavor.
Step 10
In the same pan, melt another tablespoon of butter if needed. Pour the sweet potato batter, spreading it to about 1 cm thickness, similar to the potato pancake.
Step 11
When the bottom of the sweet potato pancake is golden, flip it and cook the other side until golden brown. The sweet aroma of the cooked sweet potato indicates it’s ready.

The finished potato pancakes are subtly flavored and wonderfully savory, making them a light and enjoyable treat.
