The Ultimate Homemade Beef Sushi Experience
I made these special sushi rolls because my mom hasn’t had much of an appetite lately, and this is the only dish she truly enjoys. My eldest daughter always tells me, ‘Mom, I love you the most in the world!’ which inspires me to create delicious meals for our family.
Main Ingredients- Premium Beef (Chuck Eye Roll recommended) 500g
- Fresh Shrimp (peeled and deveined) 15 pieces
- Cucumber 1 medium
- Boiled Octopus (pre-cooked and sliced) 200g
- Crab Sticks (Imitation Crab) 5 sticks
- Salmon Roe (Ikura) 100g
- Warm Cooked Rice 2 bowls
Sushi Seasoning & Toppings- Sushi Vinegar (Seasoned Rice Vinegar) 1.5 Tbsp
- Sushi Soy Sauce 5 Tbsp
- Mayonnaise 2 Tbsp
- Mustard (Dijon or Whole Grain) 1 Tbsp
- Sugar 1.5 Tbsp
- Wasabi Paste (or Mustard Powder) 2 Tbsp
- Salt 1.5 tsp
- Sushi Vinegar (Seasoned Rice Vinegar) 1.5 Tbsp
- Sushi Soy Sauce 5 Tbsp
- Mayonnaise 2 Tbsp
- Mustard (Dijon or Whole Grain) 1 Tbsp
- Sugar 1.5 Tbsp
- Wasabi Paste (or Mustard Powder) 2 Tbsp

Cooking Instructions
Step 1
Start by thinly slicing the cucumber into long, julienne strips using a mandoline slicer or a sharp knife. Place the julienned cucumber in a bowl and lightly salt it by soaking in a brine for about 5 minutes. This step helps to draw out excess moisture and gives the cucumber a pleasant crispness, making it perfect for sushi toppings. (You can adjust the salting time to your preference.)
Step 2
Gently shred the crab sticks into bite-sized pieces. In a separate small bowl, combine the shredded crab sticks with mayonnaise, mustard, and sugar. Mix everything together until well combined to create a creamy and flavorful crab salad topping for your sushi.
Step 3
Now, let’s prepare the premium beef. Using a high-heat sear, quickly cook the beef slices. For the best sushi experience, aim to sear each side only twice. This ensures the exterior is nicely browned while the interior remains tender and rare, which is ideal for thinly sliced beef sushi.
Step 4
Prepare the fresh shrimp by briefly blanching them in boiling water until they turn pink. Once cooked, carefully peel off the shells. Immediately transfer the blanched shrimp into an ice bath for a quick chill. This process helps to firm up the shrimp and retain its succulent, springy texture.
Step 5
Finally, season the warm cooked rice with the sushi vinegar, gently folding it in with a rice paddle to create perfectly seasoned sushi rice. Lightly moisten your hands with water and form the rice into individual sushi portions. Then, artfully arrange the seared beef, blanched shrimp, sliced octopus, creamy crab salad, crisp cucumber, and glistening salmon roe on top of the rice.
