Cooking Instructions
Step 1
First, remove the inner pot of your rice cooker. Then, cut the whole head of Napa cabbage kimchi in half, and place one half flat on the bottom of the inner pot, ensuring it doesn’t overlap too much. Laying it out evenly, including the core parts, will enhance the flavor.
Step 2
Next, neatly arrange the pork neck pieces on top of the kimchi. Try to lay them out evenly without overlapping, exposing some of the bone if applicable. This ensures the meat cooks through and absorbs the flavors well.
Step 3
Drizzle about 2 ladles of the flavorful kimchi brine evenly over the pork. This liquid will help infuse the meat with the kimchi’s delicious taste.
Step 4
Thinly slice half an onion and spread the slices evenly over the pork, making sure they don’t overlap. The natural sweetness of the onion will help to mellow and round out the stew’s overall flavor.
Step 5
Finally, sprinkle 1 tablespoon of red pepper flakes evenly over the onions. This adds a subtle touch of heat and a beautiful color to the stew. Adjust the amount based on your preference for spiciness.
Step 6
Now, let’s prepare the sauce. In a bowl, combine 2 cups of water, 2 Tbsp fish sauce, 2 Tbsp soy sauce for soup, 1 Tbsp cooking syrup, 2 Tbsp cooking wine, and 1 tsp MSG-based seasoning powder. Stir well until all ingredients are thoroughly mixed. Pour this sauce mixture evenly over the ingredients in the rice cooker pot. Ideally, the liquid should partially submerge the ingredients.
Step 7
Select the ‘Multi-Cook’ or ‘Steam’ function on your rice cooker and set the cooking time for 50 minutes. If your rice cooker doesn’t have this specific function, you can use the standard ‘White Rice’ cooking mode. Once the cooking cycle begins, switch to ‘Keep Warm’ after about 10 minutes and let it cook for an additional 40 minutes.
Step 8
After 50 minutes, a wonderful aroma will fill your kitchen! Open the lid to find the kimchi and pork neck perfectly tender and cooked through. Drizzle 1 Tbsp of sesame oil around the stew and sprinkle with a little toasted sesame seeds for a finishing touch. Your delicious pork neck kimchi stew is now ready to be served over hot rice!
