Dough Ingredients
- 600g Glutinous Rice Flour
- 5g Purple Sweet Potato Powder
- 30g Sugar
- 70g Soybeans (cooked, husked, and cooled)
- 1/2 Tbsp Water (approx. 7.5ml)

- 670g Purple Sweet Potato Paste
Cooking Instructions
Step 1
Let’s start by preparing the rice cake dough. In a large bowl, combine 600g of glutinous rice flour with 5g of purple sweet potato powder. For a smoother texture, consider sifting the glutinous rice flour before mixing.
Step 2
Gently mix the two ingredients with your hands, as if crumbling them. Ensure there are no lumps and the powders are evenly distributed.
Step 3
Now, add 30g of sugar for sweetness and mix it in. Next, add 70g of cooked, husked, and cooled soybeans. Finally, add 1/2 Tbsp (approximately 7.5ml) of water and mix everything together until a cohesive dough forms. Be careful not to add too much water.
Step 4
Place the prepared dough into a steamer with boiling water. Cover and steam for 20 minutes. Ensure the steamer is producing plenty of steam before adding the dough for even cooking.
Step 5
After steaming for 20 minutes, carefully remove the dough from the steamer. Spread 670g of purple sweet potato paste evenly over the steamed dough. Cover again and steam for an additional 5 minutes. This step helps the sweet potato paste meld with the rice cake.
Step 6
Once steamed, take the rice cake out of the steamer. Handle it carefully as it will be hot. Gently separate any parts that might be sticking. Transfer the warm rice cake to a clean work surface and knead it thoroughly until it’s smooth and pliable, achieving a uniform color. This is also the time to prepare your mold: lightly grease the inside with grapeseed oil. This prevents the cake from sticking and slows down oxidation, preserving its vibrant color.
Step 7
Now, it’s time to assemble the cake in the mold. Line the mold with plastic wrap and sprinkle a thin layer of 70g black sesame powder over the plastic. When placing the rice cake dough into the mold, arrange it in a zigzag pattern, like a twisted braid. This technique creates beautiful layered patterns when the cake is sliced.
