Today, we’re making a special ‘Quail Egg Miso Soup’ by adding quail eggs, which kids absolutely love, into our classic miso soup! Main Ingredients- 1L Rice Water (approx. 5 cups)
- 20 Boiled Quail Eggs
- 1/2 pack Enoki Mushrooms (approx. 50g)
- 1/4 stalk Green Onion (mostly the white part)
- 1 tsp Minced Garlic (approx. 5g)
Seasoning- 3 Tbsp Miso Paste (approx. 45g, adjust to taste)

Cooking Instructions

Start by pouring 1 liter (about 5 cups) of rice water into a pot and bring it to a simmer over medium heat. Rice water is made by rinsing rice 2-3 times before cooking. Using rice water makes the miso soup exceptionally smooth and savory.

While the rice water is heating up, prepare the enoki mushrooms by trimming off the tough bottom ends and separating the strands. This step not only improves the texture but also keeps the soup clean and free of debris.
