Cooking Instructions
Step 1
Place the 50 quail eggs in a pot. Add enough water to cover the eggs. Add a pinch of salt and 0.5 Tbsp of vinegar; this helps the shells peel off easily. Bring to a boil over high heat, then reduce to medium-low and simmer for about 5 minutes.
Step 2
Immediately transfer the boiled quail eggs to cold water and soak them for at least 10 minutes. This cooling process makes peeling much easier. Peel all the eggs completely.

Arrange the peeled quail eggs in a pot. Add 200ml of water, 1 piece of dried kelp, 150ml of soy sauce, and 50ml of brown sugar. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes, allowing the eggs to absorb the flavors.

Gently shake the pot or stir the eggs with a spatula occasionally while simmering. This ensures the soy sauce evenly coats the quail eggs, giving them a beautiful, appetizing color. Stir carefully to prevent sticking or burning.
