This sweet and tangy pickled radish salad is a fantastic side dish that’s a real ‘rice thief’! You can easily make it with ingredients you likely already have at home. It requires minimal preparation and is perfect for those times you need a quick, flavorful addition to your meal.
Ingredients- 550g Pickled Radish (Danmuji)
- Chives (a small handful)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Sugar
- 1 Tbsp Soy Sauce
Cooking Instructions
Step 1
First, open the packages of pickled radish and chives. Gently wash the chives under running water until clean.
Step 2
Place the pickled radish into a mixing bowl. It’s recommended to soak the pickled radish in water for about 5 minutes. This step helps to mellow out the intense sourness, making it more palatable, especially for children.
Step 3
While the pickled radish is soaking, finely chop the washed chives into small pieces, about 1cm in length. Chop only the amount you plan to use for the salad and set it aside. You can store any remaining chives in an airtight container in the refrigerator.
Step 4
In a small bowl, combine the chopped chives with the ingredients for the seasoning (sauce). Add 2 tablespoons of gochugaru, 1/2 tablespoon of sugar, and 1 tablespoon of sesame oil. Stir these ingredients together with a spoon until well combined. You can adjust the amount of sesame oil to your preference.
Step 5
Drain the pickled radish thoroughly after soaking. Add the drained pickled radish to a larger mixing bowl. Pour the prepared seasoning (sauce) over the radish. Carefully add 1 tablespoon of soy sauce. Put on a pair of disposable gloves and gently toss everything together until the pickled radish and seasoning are evenly distributed. Be careful not to over-mix, as this can make the radish mushy.

As you mix, if the color of the pickled radish salad seems too light, gradually add a little more gochugaru while gently tossing, until it reaches your desired vibrant red hue. Your delicious seasoned pickled radish salad is now ready to enjoy!
