There are those nights when you get home from work and just don’t feel like cooking dinner. Yet, you still need to feed the kids… Sometimes, you’re so tired you’ll even eat straight from the side dish container instead of bothering to transfer it to a plate! That was me today… After pulling out all the containers from the fridge and even reconsidering leftovers from the night before, I knew meat simply had to be on the table in this household! This recipe uses beef brisket from the freezer, made in a flash! Today’s dish is incredibly simple yet boasts a flavor that’s anything but ordinary: the Beef Brisket and Bean Sprout Stir-fry. Simple yet rich in flavor, with a delightful crunchy and savory taste.

Ingredients

  • 300g beef brisket
  • 150g bean sprouts
  • Sesame seeds, for garnish
  • 1 Tbsp sesame oil

Seasoning Sauce

  • 1 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • 1 Tbsp sugar
  • 1 Tbsp cooking wine or soju

While beef short rib (chadolbagi) would be absolutely perfect, it’s quite expensive and can quickly break the budget. That’s why we’re using beef brisket, which is readily available nowadays without any gamey smell. Prepare the bean sprouts by rinsing them under water and then draining them thoroughly in a colander to remove excess moisture.

Let’s mix the seasoning sauce in advance. Combine 2 Tbsp oyster sauce, 1 Tbsp soy sauce, and 1 Tbsp sugar in a bowl and mix well. We’ll reserve the sesame seeds and sesame oil for the end to add flavor, but you can mix them all together now if you prefer.

Start by stir-frying the beef brisket in a pan that’s not too thin. If you’re concerned about any potential gamey smell, you can add 1 tablespoon of cooking wine or soju to help eliminate it. Cooking in a very flat pan can make it difficult to stir-fry the bean sprouts later when they’re added, as ingredients might get crowded.

Beef brisket releases quite a bit of oil when cooked. Eating all of that oil might be a bit too rich! Once the brisket is partially cooked, push it to one side of the pan and use paper towels to gently blot away the excess oil. Removing some of the grease will make the dish lighter and more enjoyable.

Time for the bean sprouts! I didn’t use a whole bag, which is typically around 250-300g. Using about half a bag is a great ratio with the brisket. Add them to the pan!

Now, add the seasoning sauce! The seasoning level can vary depending on the amount of bean sprouts used. For about 300g of beef brisket and half a bag of bean sprouts, the amount of sauce I’ve provided should be just right for a side dish to accompany rice.

Turn the heat up to high and stir-fry quickly! The key is to cook everything rapidly over high heat. You want the bean sprouts to remain crisp, so don’t overcook them. A quick toss for about 1-2 minutes is perfect.
