  • 1 stalk Green Onion (white part mainly)
  • 2-4 Dried Chili Peppers (adjust according to size)

First, prepare 300g of cabbage. This is roughly 1/4 of a medium-sized cabbage, a good amount that’s not too much or too little.

Next, gather one stalk of green onion and 2 to 4 dried chili peppers. Use mostly the white part of the green onion. The dried chilies will add a spicy aroma and color. Adjust the quantity based on the size of the chilies. Prepare about 50g (approximately 4 tablespoons) of the all-purpose soy sauce.

Finely chop the green onion into slices about 0.3cm thick. This thin slicing helps to release a rich, savory aroma when making the green onion oil. It’s a crucial step for building flavor from the start! 🙂

Slice the cabbage thinly into strips about 0.5cm thick. If you slice them too thickly, they will take longer to cook, so cutting them to a similar thickness ensures even seasoning and a pleasant texture. Personally, I like to cut them slightly thicker to maintain a nice crispness.

To reduce any slight bitterness from the cabbage and make it fresher, fill a bowl with plenty of water and add 1 tablespoon of vinegar. Soak the prepared cabbage in this vinegar water for about 10 minutes. Afterwards, rinse it several times under clean running water and drain well. 🙂

Now it’s time to stir-fry. Heat 5 tablespoons of cooking oil in a pan. Add about 2/3 of the chopped green onion to the pan. You can use olive oil or your preferred cooking oil. This step is about creating fragrant green onion oil.

Place the pan over high heat and stir-fry the green onion for about 1 minute to release its aroma. Once the green onion starts to turn golden brown, reduce the heat to low. Cut the dried chili peppers into 2-3cm pieces with scissors and add them to the pan. Adding them whole can make them difficult to eat later, so cutting them is recommended.

Stir-frying the dried chilies a bit longer will make the green onion oil deeper and more golden, enhancing its flavor. At this point, quickly add all the sliced cabbage to the pan. Stir-frying quickly over high heat is key to keeping the cabbage crisp.

After adding the cabbage, stir-fry over high heat for another 2-3 minutes. Once the cabbage begins to wilt slightly, pour the 50g of all-purpose soy sauce around the edges of the pan. As the soy sauce heats up, it will infuse the cabbage more effectively.
