Leftover Chicken Perfection: Delicious Chicken Mayo Donburi
In my house, chicken rarely lasts long because we love it so much! But this time, I had a bit of leftover chicken and shrimp tempura. So, I decided to make a Chicken Mayo Donburi. I’d never tried it before and imagined it would be incredibly rich, but surprisingly, it wasn’t greasy at all and tasted fantastic! I’m excited because I think this recipe can be adapted for various delicious one-bowl meals. Enjoy!
Main Ingredients- Leftover cooked chicken (boneless, shredded)
- 2 bowls cooked rice
- 1 onion
- A little green onion
- Shredded nori (seaweed)
- 4 eggs
Seasoning & Sauce- 5 Tbsp teriyaki sauce
- Mayonnaise (to taste)
- Pinch of black pepper

Cooking Instructions
Step 1
First, debone the leftover chicken and shred the meat into bite-sized pieces. If you have leftover shrimp tempura, gently warm it in the microwave.
Step 2
Crack the 4 eggs into a bowl and whisk them without any salt. Scramble the eggs until softly cooked. It’s best to keep them tender.
Step 3
Thinly slice the onion and finely chop the green onion. Having your vegetables prepped beforehand will speed up the cooking process.
Step 4
Heat 1 tsp of olive oil in a pan over medium heat. Add the sliced onions and sauté until they become translucent. This step brings out the natural sweetness of the onions.
Step 5
Once the onions are about half-cooked, add the chopped green onions and continue to sauté until fragrant.
Step 6
Next, add 5 Tbsp of teriyaki sauce and a pinch of black pepper. Mix everything well.
Step 7
Stir-fry until the sauce thickens slightly and the vegetables are tender and lightly caramelized. Be careful not to overcook them until mushy.
Step 8
In a separate pan, place the shredded chicken. Sauté the chicken without any added oil. Cooking it in its own rendered fat will make it more flavorful and less greasy.
Step 9
Serve 2 bowls of hot cooked rice into serving bowls.
Step 10
Arrange the scrambled eggs around the sides of the rice in the bowl.

Neatly pile the sautéed onion and green onion mixture on top of the rice.

Generously top the vegetables with the teriyaki-glazed chicken.

Finally, sprinkle shredded nori over everything for an extra layer of savory flavor.

Finish by drizzling mayonnaise over the top as desired. The combination of the sweet and savory sauce with the creamy mayonnaise creates a wonderfully balanced taste!
