Main Ingredients- Well-fermented Kimchi: 1 bowl (approx. 1 serving)
- Cooked Rice: 2 bowls (approx. 2 servings)
- Spam or Ham: 200g
Seasoning & Extras- Kimchi Brine: 2 Tbsp
- Gochugaru (Korean Chili Flakes): 1 Tbsp
- Sesame Oil: 2 Tbsp
- Cooking Oil: 2 Tbsp
- (Optional) Sugar: 1 tsp (to mellow the kimchi’s sourness)
- (Optional) Salt: pinch (to adjust seasoning)
- Kimchi Brine: 2 Tbsp
- Gochugaru (Korean Chili Flakes): 1 Tbsp
- Sesame Oil: 2 Tbsp
- Cooking Oil: 2 Tbsp

Cooking Instructions
Step 1
First, finely chop the kimchi. Dice the ham into bite-sized pieces (cubes or strips). Prepare about 1 bowl of kimchi and 2 bowls of rice.

Dice the Spam or ham into pieces suitable for stir-frying. (You can use your favorite brand of ham like Spam or RosuPau.)

Heat 2 tablespoons of cooking oil in a wok or large frying pan over medium heat. Add the chopped kimchi and stir-fry for about 2-3 minutes until softened. If your kimchi is very sour, adding 1 teaspoon of sugar at this stage will help balance the acidity and enhance the flavor.

A key secret to delicious Kimchi Fried Rice is the kimchi brine! Add 2 tablespoons of kimchi brine to the stir-frying kimchi. This will infuse the rice with the deep, savory flavor of the kimchi, creating a perfect harmony. Continue to stir-fry for another minute, mixing the brine and kimchi well.
