Main Ingredients- 200g Shrimp meat
- 2 Tbsp Corn kernels (approx. 40g)
- 1/2 Onion
- 3 Tbsp Cooking oil
- Pinch of salt
- Pinch of black pepper
- 1/2 Tbsp Mirin (approx. 8g)
Chili Sauce- 2 Tbsp Gochugaru (Korean chili powder, approx. 20g)
- 2 Tbsp Ketchup (approx. 30g)
- 1 Tbsp Vinegar (approx. 10g)
- 1 Tbsp Corn syrup or honey (approx. 15g)
- 2 Tbsp Water (approx. 30g)
- 2 Tbsp Gochugaru (Korean chili powder, approx. 20g)
- 2 Tbsp Ketchup (approx. 30g)
- 1 Tbsp Vinegar (approx. 10g)
- 1 Tbsp Corn syrup or honey (approx. 15g)
- 2 Tbsp Water (approx. 30g)
Cooking Instructions
Step 1
First, rinse the peeled shrimp meat and pat it dry. In a bowl, gently toss the shrimp with 1/2 Tbsp mirin, a pinch of salt, and a pinch of black pepper. Let it marinate for about 5 minutes to remove any fishy odor and ensure a tender texture.
Step 2
Peel and wash the half onion. Dice it into bite-sized pieces, slightly larger than the shrimp, or into rough chunks. This size will soften nicely during cooking.
Step 3
In a separate bowl, combine all the chili sauce ingredients: 2 Tbsp gochugaru, 2 Tbsp ketchup, 1 Tbsp vinegar, 1 Tbsp corn syrup, and 2 Tbsp water. Whisk everything together until well combined and any clumps are dissolved. This sauce will coat the shrimp beautifully.
Step 4
Heat 3 Tbsp of cooking oil in a pan over medium heat. Add the diced onion and stir-fry until it becomes translucent and slightly softened, about 3-4 minutes. Caramelizing the onion slightly will enhance the sweetness of the dish.
Step 5
Once the onions are translucent, pour the prepared chili sauce into the pan. Reduce the heat to low and stir gently as the sauce simmers and thickens slightly, being careful not to burn it. This process helps to meld the flavors.
Step 6
When the sauce has thickened slightly, add the marinated shrimp and the drained corn kernels to the pan. Increase the heat to medium-high and stir-fry quickly for about 3-4 minutes, or until the shrimp turn pink and opaque and are well coated in the sauce. Quick cooking prevents the shrimp from becoming tough.
