Cooking Instructions
Step 1
First, prepare the fresh chives. Remove any dirt or wilted leaves from the chives and wash them thoroughly under running water. After draining the water, cut the chives into manageable lengths of about 5-7 cm (approximately 2-3 inches). Cutting them to a suitable size will make them easier to eat.

The secret to delicious stir-fried chives lies in the seasoning! In a small bowl, combine 2 tablespoons of gochugaru, 3 tablespoons of fish sauce, and 2 tablespoons of plum extract. Mix well to create the seasoning sauce. Using anchovy or sand lance fish sauce is crucial for achieving a deep, savory flavor. The plum extract not only adds sweetness but also enhances the fresh aroma of the chives.
Step 3
Now, add the prepared seasoning sauce to the chives and gently toss them together. Be careful not to overmix or mash the chives; the trick is to lift and toss them gently with your hands so the seasoning is evenly distributed.
