  • 1 Tbsp Burdock root soy sauce (or regular soy sauce)
  • 1 Tbsp Minced garlic
  • 2 Tbsp Cooking oil
  • 1 Tbsp Oligosaccharide (or honey/sugar, adjust to taste)
  • A little Sesame oil
  • A little Toasted sesame seeds (optional)

Cooking Instructions

Wash the eggplants thoroughly. Cut them into 4 equal pieces lengthwise, and then slice them into bite-sized pieces, about the length of your index finger’s knuckle (approximately 1-1.5 cm thick). Slice the onion into thick, coarse strips. Cut the carrot into similar length and thickness strips. Finely chop the green and red chili peppers, removing the seeds, to use as a garnish.

Heat a large skillet over medium heat and add 2 tablespoons of cooking oil. Once the pan is hot, add the sliced eggplants first. Stir-fry the eggplants for about 2-3 minutes until they start to soften and turn translucent, absorbing the oil. Be careful not to overcook them, as they can become mushy.

Once the eggplants are partially cooked, add the sliced onion and carrot to the pan. Continue to stir-fry for another 2-3 minutes until the onions become translucent and the carrots are slightly tender-crisp. The key here is to maintain a pleasant crunch in the vegetables.

Now it’s time to add the flavor! Pour 1 tablespoon of burdock root soy sauce (or your preferred soy sauce) along the edge of the pan. This allows the soy sauce to slightly caramelize, enhancing its rich aroma and taste. Stir everything together for about 1 minute over medium heat until the soy sauce is well distributed.

Sprinkle a little toasted sesame seeds just before turning off the heat for extra nuttiness.
