Quick & Easy 10-Minute Bibim Guksu

When you can’t decide what to eat for dinner and need something quick, this Bibim Guksu is the answer! It’s an incredibly simple dish as long as you have the sauce ready. The savory, sweet, and spicy flavors will awaken your appetite.

Main Ingredients

  • Somen noodles, 1.5 servings (approx. 200g)
  • Kimchi, 1/3 cup (finely chopped)
  • Carrot, 1/3 (thinly julienned)
  • Perilla leaves, 3 sheets (thinly julienned)
  • Boiled egg, 1 (halved or mashed)

Special Bibim Sauce

  • Gochujang (Korean chili paste), 1 tsp
  • Gochugaru (Korean chili flakes), 1 tsp
  • Soy sauce, 1/2 tsp
  • Oligosaccharide (or honey), 1/2 tsp
  • Vinegar, 1 tsp (apple cider or brown rice vinegar recommended)
  • Sesame oil, 1 tsp
  • Toasted sesame seeds, for garnish

Cooking Instructions

First, let’s prepare the noodles. Measure out about 1.5 servings of somen noodles. (One serving might feel a bit small, so preparing a bit extra is recommended!)

Bring a large pot of water to a rolling boil. It’s important to use plenty of water to prevent the noodles from sticking together.

If you have a moment, adding about 1/2 teaspoon of cooking oil to the boiling water can help prevent the noodles from becoming mushy or clumping. Today, we’re short on time, so we’ll skip this step!

While the noodles are boiling, boil an egg. (You can easily steam it or boil it in water for about 12-15 minutes for a hard-boiled egg.) Also, thinly julienne the carrot and perilla leaves, and finely chop the kimchi. Preparing these ingredients in advance will save you time. Meticulous preparation, even when rushed, is key to a delicious dish!

Now, it’s time to make the most important part: the Bibim sauce! Combine all the sauce ingredients in a bowl.

Add the gochujang, gochugaru, soy sauce, oligosaccharide (or honey), and vinegar. Mix them well to create the base flavor. Taste and adjust the sweetness or tanginess according to your preference.

Prepare the julienned carrots and perilla leaves, along with the finely chopped kimchi. Having crunchy vegetables ready beforehand is a good idea.

Once the somen noodles are cooked, rinse them thoroughly under cold running water to remove excess starch, then drain them well in a colander. Properly draining the water ensures the sauce adheres to the noodles instead of sliding off. Add the noodles to the prepared sauce and mix gently until well coated. Finally, drizzle with 1 teaspoon of sesame oil and sprinkle with toasted sesame seeds. Top with the prepared vegetables and the boiled egg for a visually appealing and delicious Bibim Guksu.
