Main Ingredients- 1/2 onion, thinly sliced

- 4 shiitake mushrooms, stems removed and thinly sliced
- 2 servings dried glass noodles (soaked in cold water for 30 minutes)
Japchae Sauce- 2 Tbsp sugar
- 1 Tbsp oyster sauce
- 3 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 cup water (200ml)
Pork Marinade- 100g pork (for stir-fry)
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp cooking wine (mirin)
- 2 Tbsp sugar
- 1 Tbsp oyster sauce
- 3 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 cup water (200ml)

Cooking Instructions
Step 1
First, season the 100g of pork with a pinch of salt, a pinch of black pepper, and 1 Tbsp of cooking wine. Gently mix to ensure the pork is evenly coated. This marinating step helps tenderize the pork and remove any gamey odors.
Step 2
In a large bowl, combine all the Japchae sauce ingredients: 2 Tbsp sugar, 1 Tbsp oyster sauce, 1 Tbsp cooking wine, 3 Tbsp soy sauce, and 1 cup of water. Stir until the sugar is completely dissolved to create a smooth sauce. Preparing the sauce in advance makes the cooking process much smoother.
Step 3
Wash and prepare the vegetables: thinly slice the onion, red and yellow bell peppers, carrot, and shiitake mushrooms (after removing the stems). Try to cut them into uniform strips for even cooking.

Have your soaked glass noodles ready (soaked in cold water for 30 minutes). Bring a pot of water to a boil. Add the soaked glass noodles and immediately loosen them with chopsticks. Cook briefly, then drain and rinse under cold water. This technique ensures the noodles are delightfully chewy and don’t become mushy.

Heat a lightly oiled pan over medium-high heat. Add the marinated pork and stir-fry quickly until it’s mostly cooked through. Break up any clumps with your chopsticks to ensure the pork cooks evenly and becomes tender.

Once the pork is almost fully cooked, add the sliced shiitake mushrooms to the pan and continue stir-frying. Cooking the mushrooms with the pork enhances their savory flavor.

When the shiitake mushrooms start releasing their aroma, add all the remaining prepared vegetables (onion, bell peppers, carrot) to the pan. Stir-fry them over high heat for just a minute or two. The key is to cook the vegetables until they are crisp-tender, not soft.

Add the cooked glass noodles on top of the stir-fried pork and vegetables.

Pour the prepared Japchae sauce over the noodles and vegetables. Stir-fry everything together over medium-high heat for about 3 minutes, allowing the sauce to coat the noodles and flavors to meld. Cook until the sauce thickens slightly.

Once the sauce has reduced and coated the noodles nicely, turn off the heat. If using spinach (optional), add it now. The residual heat will cook the spinach perfectly, keeping its vibrant green color and tender texture.
