Cooking Instructions
Step 1
If you are using the E-mart anchovy stir-fry kit, please prepare the anchovies included in the kit. If you don’t have the kit, prepare about 2 handfuls (60g) of dried small anchovies.
Step 2
Place the prepared anchovies in a dry, unheated pan and stir-fry slowly over medium-low heat. This step is important for removing the fishy smell and making the anchovies nuttier and more flavorful. Stir-fry until they turn a light golden brown, being careful not to burn them. Anchovies need to be dry to become crispy.
Step 3
Once the anchovies are lightly browned, reduce the heat to low. Add 2 tablespoons of cooking wine and quickly stir-fry with the anchovies. The cooking wine effectively eliminates any remaining fishy odor and enhances the flavor.

After stir-frying the anchovies for a while, add 1 tablespoon of avocado oil to the pan. (Using spray avocado oil makes measuring and distributing the oil more convenient.) Stir-fry lightly with the anchovies after adding the oil.

Thinly slice 3 cloves of garlic. Add the sliced garlic to the pan with the anchovies and oil, and sauté briefly until the garlic becomes fragrant. Be mindful of the heat to prevent the garlic from burning.

Finally, add 1 tablespoon of corn syrup or honey for sweetness and a glossy finish. Stir-fry quickly after adding the corn syrup, ensuring all ingredients are well coated with the sauce. Turn off the heat once it starts to become glossy. Be careful not to overcook at this stage, as the anchovies can become too hard.
