On hot summer days, braising beans for a long time over the stove can feel like a chore. This recipe significantly cuts down cooking time, making it a much simpler side dish to prepare. We’re using rice syrup instead of sugar for a healthier, lower-sugar version that’s perfect for kids and adults alike. It’s a fantastic, flavor-packed side that pairs perfectly with rice!

*Note: The bean soaking time is not included in the recipe’s cooking time. Minimum soaking time is 1 hour in cold water or 4 hours in hot water.

Essential Ingredients

  • 3 cups Seoritae (black soybeans, approx. 360g)
  • 2 cups water (approx. 400ml)

Cooking Instructions

Step 1

First, prepare the Seoritae beans. Measure 3 cups of beans using a 160ml paper cup. Lightly rinse the beans under running water 2-3 times to remove any dust. Place the rinsed beans in a pot or bowl, and pour hot water (boiled in a kettle) over them, ensuring they are fully submerged. Let the beans soak for about 1 hour. (Using hot water significantly speeds up the soaking process).

Transfer the soaked beans to a cooking pot. Add the prepared braising liquid: 6 Tbsp soy sauce, 1 Tbsp fish sauce, and 2 cups of water. Bring the mixture to a boil over medium-high heat. Once it starts to bubble vigorously, immediately reduce the heat to low. Partially cover the pot and simmer for about 17 minutes, allowing the beans to absorb the flavors and become tender.

Once the beans are tender and most of the liquid has evaporated, leaving a slightly syrupy consistency, add 5 Tbsp of rice syrup. Continue to simmer for another 3 minutes, stirring gently to ensure the syrup is well combined with the beans. You can substitute rice syrup with corn syrup. If using granulated sugar, it’s advisable to reduce the amount slightly, as sugar can alter the texture of the beans, making them firmer.

Turn off the heat. Drizzle 1 Tbsp of sesame oil over the braised beans. This adds a wonderful nutty aroma and flavor. Gently stir to distribute the sesame oil evenly.
