Quick & Easy Cucumber Salad (Oi Muchim)

Made a delicious side dish with fresh cucumbers! This quick and easy recipe is perfect for any meal.
Main Ingredients- 1 cucumber (medium size)
- 1/2 onion (small size)
- 1 Korean green chili pepper (optional, add for extra spice)
Seasoning- 1 Tbsp red pepper flakes (gochugaru, adjust to your spice preference)
- 1 tsp minced garlic
- 1 tsp salt (adjust to taste)
- 1 tsp Dasida (or any umami seasoning)
- 1 tsp sugar (adjust sweetness)
- 2 Tbsp vinegar (adjust sourness)
- 1 tsp toasted sesame seeds
- 1 Tbsp red pepper flakes (gochugaru, adjust to your spice preference)
- 1 tsp minced garlic

Cooking Instructions
Step 1
First, wash the cucumber, onion, and chili pepper thoroughly. Slice the cucumber thinly, either into rounds or matchsticks. Thinly slice the onion as well. If using the chili pepper, remove the seeds and mince it finely for a bit of heat.

Place all the prepared cucumber, onion, and chili pepper into a mixing bowl. Combining them all at this stage helps the seasoning distribute evenly.
Step 3
Now it’s time to add the seasonings. Add 1 tsp of minced garlic, 1 Tbsp of red pepper flakes, 1 tsp of salt, 1 tsp of Dasida, 1 tsp of sugar, and 1 tsp of toasted sesame seeds for a nutty aroma.
Step 4
Finally, drizzle in 2 Tbsp of vinegar for that essential tangy flavor. You can adjust the amount of vinegar to your liking.
Step 5
Gently mix everything together with your hands. It’s important to toss the ingredients delicately so that the seasoning coats the cucumber and vegetables evenly. Make sure the red pepper flakes are well incorporated and not clumpy. After just a quick mix, your crispy and delicious cucumber salad will be ready!
