Main Ingredients
- 100g Beef (thinly sliced, like for bulgogi)
- 1/4 Onion
- 1 Egg

- 2 Tbsp Tsuyu (Japanese soy sauce base)
- 2 Tbsp Mirin (sweet rice wine)
- 3 Tbsp Water

Cooking Instructions
Step 1
Wash the onion thoroughly, pat it dry, and slice it thinly into strips. The thinner the slices, the better they will absorb the sauce and taste!

In a small pot or pan, combine 2 tablespoons of tsuyu, 2 tablespoons of mirin, and 3 tablespoons of water. This simple blend of ingredients creates the savory depth of the Gyudon.

Add the sliced onions to the sauce mixture and bring it to a simmer over medium heat. Once it starts boiling, reduce the heat slightly and cook until the onions become tender and translucent.

Turn off the heat once the onions are transparent and soft. Be careful not to overcook them, as they can become mushy.

My eldest daughter tends to avoid chewy textures, so just in case, I scored the beef slices with a knife. This makes the meat incredibly tender, even for picky eaters. (Optional step)

Lightly heat a pan and add the scored beef. Sear it quickly over high heat on both sides. You want to cook just the surface to keep the inside juicy.

Keep the heat on low, aiming to cook just the outer layer until it turns opaque. The key is to cook it lightly to maintain a tender texture, rather than cooking it all the way through.

Once the beef is lightly cooked, thinly slice it with kitchen scissors. Immediately add the sliced beef to the simmering onion sauce. Don’t forget to add any delicious juices left in the pan!
