Introducing our Poo Pad Pong Curry, elevated with the premium Voco Coconut Milk. This dish offers a delightful blend of tender crab meat, a rich coconut milk base, and fragrant curry spices. It’s an effortless way to bring a taste of Southeast Asia to your table. Perfect for a quick yet impressive meal!
Ingredients- 8 pieces imitation crab sticks
- 2/3 cup tempura flour
- 1/2 cup water
- 1/3 cup cooking oil (for frying)
- 1 Tbsp ground chili paste
- 200ml Voco Coconut Milk Premium
- 1 onion (thinly sliced)
- 1 ladleful of Pad Thai sauce (or fish sauce)
- 2 Tbsp curry powder
- 2 eggs (lightly beaten)
- 1 handful of scallions (chopped)
Cooking Instructions
Step 1
Gently tear one end of each imitation crab stick. This helps the batter adhere better during frying, resulting in a crispier texture.
Step 2
In a bowl, combine the tempura flour and water, mixing well with chopsticks until a smooth batter forms. Dip the prepared crab sticks into the batter, ensuring they are fully coated. Fry them in preheated cooking oil over medium heat until golden brown and crispy.
Step 3
In a separate pan, heat 1/3 cup of cooking oil over medium-low heat. Add the ground chili paste and sauté until fragrant, being careful not to burn it. Stir continuously to release its aroma.

Add the thinly sliced onion to the pan and stir-fry until softened and translucent. The natural sweetness of the onions will enhance the sauce’s flavor.

Pour in the Pad Thai sauce (or fish sauce) and add the curry powder. Stir vigorously with a spatula or ladle to dissolve the curry powder completely, ensuring there are no lumps. Cook for a minute to toast the spices.

As the sauce begins to thicken slightly, gradually pour in the 200ml of Voco Coconut Milk Premium. Stir continuously to combine the coconut milk with the sauce, creating a smooth and rich consistency.

Slowly drizzle the lightly beaten eggs into the simmering sauce. Gently stir just once or twice to create soft ribbons of cooked egg. Avoid over-stirring, which can break the egg into small pieces.
