Quick & Easy Tuna Poke Bowl

Ingredients- 2 cans (large, approx. 3.76kg total) Tuna in water or oil, drained
- 1kg Sweet Corn, drained
- 5 Red Onions
- 1kg Chicory (Radicchio or similar leafy greens)
- 2kg Frozen Avocado
- 300g Mayonnaise
- 100g Black Pepper
- Teriyaki Sauce (to taste)
Cooking Instructions
Step 1
First, drain the tuna thoroughly. If using tuna in oil, drain most of the oil; if in water, drain it completely. This step ensures the poke isn’t soggy and the flavors are concentrated. In a bowl, combine the drained tuna with mayonnaise, black pepper, and the drained sweet corn. Gently mix everything together using a fork or spatula, being careful not to mash the tuna too much. You want to keep some texture.
Step 2
Wash the chicory thoroughly under running water to remove any dirt or debris. Pat it dry and then chop it into roughly 1-2cm wide strips. Set aside.
Step 3
Thinly slice the red onions. To mellow their sharp flavor, soak the slices in cold water for about 10 minutes. Afterward, drain them well and pat them dry.
Step 4
Remove the frozen avocado from the freezer about an hour before you plan to serve. Let it thaw at room temperature until it’s soft but not mushy. Once thawed, cut it into bite-sized cubes.
Step 5
To assemble your poke bowl, start by placing a generous portion of cooked rice in your serving bowl. Arrange the prepared tuna mixture, sliced red onions, avocado cubes, and chicory on top of the rice. Drizzle with teriyaki sauce according to your preference. Give it a good mix and enjoy your fresh, flavorful tuna poke!
