Quick & Fresh Radish Salad (Mu Saengchae)
Vibrant and Crisp Radish Salad – Ready in Minutes!
Here’s a delightful radish dish I recently made: a simple Mu Saengchae that’s dressed and ready to eat immediately, without any pre-salting. It’s incredibly refreshing and perfect for a quick side dish or as a topping for your favorite meals.
Main Ingredients
- Shredded radish, about 3 handfuls (approx. 300g)
Seasoning
- 2.5 Tbsp. Chopi fish sauce (or anchovy fish sauce)
- 1.5 Tbsp. Gochugaru (Korean chili flakes)
- 1 Tbsp. Minced garlic
- 1 Tbsp. Minced green onion
- 1 Tbsp. Maesilcheong (plum extract/syrup)
- A pinch of toasted sesame seeds
- 2.5 Tbsp. Chopi fish sauce (or anchovy fish sauce)
- 1.5 Tbsp. Gochugaru (Korean chili flakes)
- 1 Tbsp. Minced garlic
- 1 Tbsp. Minced green onion
- 1 Tbsp. Maesilcheong (plum extract/syrup)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, let’s prepare the seasoning. In a small bowl, combine 2.5 tablespoons of Chopi fish sauce (or anchovy fish sauce), 1.5 tablespoons of Gochugaru (Korean chili flakes), 1 tablespoon of minced garlic, 1 tablespoon of minced green onion, and 1 tablespoon of Maesilcheong (plum extract/syrup). Mix everything thoroughly with a spoon until well combined. Making the seasoning ahead of time allows the Gochugaru to soften and absorb the flavors, leading to a more integrated and delicious dressing. It also allows for a slight fermentation, which enhances the overall taste.
Step 2
Now, add the prepared seasoning mixture to the shredded radish. Using your hands or a spatula, gently toss the radish and seasoning together. Be careful not to overmix or crush the radish, as we want to maintain its crisp texture. Ensure the seasoning coats all the strands of radish evenly for the best flavor.
Step 3
And there you have it – your delicious Mu Saengchae is ready! This salad has a lovely balance of spicy and slightly sweet flavors, with a wonderfully crisp texture. It’s incredibly satisfying to eat, especially when paired with a bowl of warm rice or as part of a larger meal. Enjoy this fresh and vibrant radish salad!
