Ingredients
  • 20 Tbsp Cooking oil (vegetable, canola, or other neutral oil)
  • 1 Tbsp Chili powder (fine grind)
  • 1 Tbsp Minced garlic
  • A little chopped green onion (white parts preferred)

Cooking Instructions

Step 1

In a microwave-safe bowl that’s deep enough to prevent spills, combine the 20 Tbsp of cooking oil, 1 Tbsp of chili powder, 1 Tbsp of minced garlic, and a small amount of chopped green onion. Stir gently to ensure all ingredients are well mixed.

Step 2

Cover the bowl tightly with plastic wrap. To allow steam to escape and prevent the wrap from ballooning excessively, poke several small holes in the plastic wrap using a toothpick or the tip of a fork.

Step 3

Place the covered bowl in the microwave and heat for approximately 1 minute and 40 seconds to 2 minutes. (Adjust the time based on your microwave’s wattage.) Be extremely cautious when removing the bowl, as it will be very hot. Use oven mitts or a thick towel for safety.

Step 4

Once heated, carefully strain the mixture through a fine-mesh sieve into another container to separate the chili oil from the solids (chili flakes, garlic, and green onion). Discard the solids, or you can use them in stir-fries for added flavor.

Step 5

Voila! Your homemade chili oil is ready. Allow it to cool completely before transferring it to an airtight container. Stored in the refrigerator, it should stay fresh for about 2 weeks. Use this flavorful oil to enhance your stir-fries, seasoned vegetables, stews, and more!
