10-Minute No-Oven Sweet Potato Bread: Super Simple and Moist!

We all dislike complicated and tedious recipes, right? This one is so easy, you can make it even on a busy weekday – perfect for a quick treat. I highly recommend giving this recipe a try!
Ingredients- 3 medium sweet potatoes

Cooking Instructions
Step 1
First, prepare your 3 sweet potatoes. You can steam them or microwave them until cooked. Once cooked, peel them while still warm and mash them thoroughly using a fork or a masher until very smooth. Ensure there are no lumps for the best texture. (Approx. 1 minute)
Step 2
Add the 2 eggs to the mashed sweet potatoes. Whisk everything together using a whisk or a fork until you have a smooth and uniform batter with no lumps. Mixing thoroughly until all ingredients are well combined is key. (Approx. 1 minute)
Step 3
Transfer the batter into a microwave-safe container or bowl. Gently level the surface. Cover the container with plastic wrap. To prevent the wrap from puffing up too much and to ensure even cooking, poke a few small holes in the plastic wrap with a skewer or fork.
Step 4
Place the prepared container into the microwave and cook for approximately 5 minutes. The cooking time may vary slightly depending on the moisture content of your sweet potatoes and your microwave’s wattage. Check its doneness around the 4-minute mark and add 30-second increments if needed.
Step 5
Once removed from the microwave, you’ll see your sweet potato bread has puffed up beautifully, resembling bread! It will have a wonderfully soft and fluffy texture. Let it cool slightly, then slice it into bite-sized pieces and enjoy while still warm. It’s delicious on its own, or you can add a drizzle of honey or a sprinkle of cinnamon for an extra touch of flavor.
