First, wash and prepare the potato and onion. Slice the potato thinly, about 2-3mm thick. If you have a large potato, cutting it in half before slicing will help it cook faster. Similarly, slice the onion thinly to about 2-3mm thickness. If the onion is large, you can use just half. Tip: If you keep pre-minced green onions frozen, it’s convenient to use them when needed. Getting into the habit of pre-chopping green onions makes cooking much easier.

Add the thinly sliced potato and onion to your ramen pot. Next, add 1 tablespoon of dried anchovy powder for broth, 2 thinly sliced red chili peppers, 2 thinly sliced green chili peppers, and 0.5 tablespoon of soy sauce for soup. Pour in 400ml of water. (If you know that one cup is about 250ml, think of it as one cup plus a little less than half a cup.) Tip: Potatoes absorb water, so it’s good to add a bit more water than you would for a typical soup. You can also use 1/4 tablespoon of salt instead of soy sauce for a savory flavor.

Now, set your ramen pot to the highest heat setting and bring it to a boil with the lid open. Once the soup is bubbling vigorously, maintain the high heat and let it simmer for 5 minutes with the lid still off.
