A quick and easy seafood scallion pancake made with whatever you have on hand! Inspired by Busan Dongnae pancakes, this recipe incorporates eggs for a richer flavor and beautiful presentation. Using diced squid and shrimp from shrimp paste adds a wonderful umami boost. Enjoy this personalized, speedy seafood pancake!
Main Ingredients- 4 stalks scallions
- 5 shrimp from shrimp paste
- 3 Tbsp diced squid
- 3 Tbsp pancake mix
- Water (to adjust batter consistency)
- 2 eggs
Cooking Instructions
Step 1
First, in a bowl, dissolve the pancake mix with water. Gradually add water and whisk until you have a smooth batter without lumps. The key here, following the Dongnae pancake style, is to pour the batter over the ingredients rather than mixing everything together beforehand.

Prepare your toppings: have the 5 shrimp from the shrimp paste and the diced squid ready. Using fresh seafood will enhance the flavor.

Trim any rough ends off the scallions and wash them thoroughly. Pat them dry and cut them in half (about 3-4 inches long). If you’re using a wide pan, you can leave them whole, but for a narrower cast-iron pan, cutting them makes them fit better.

Heat your cast-iron pan over high heat until it’s very hot. Add about two rounds of oil to coat the pan generously. First, arrange the cut scallions evenly across the hot pan. Then, distribute the shrimp paste shrimp and diced squid over the scallions.

Pour the prepared batter evenly over the scallions and seafood. Ensure the batter coats everything nicely.
Step 6
Crack the 2 eggs directly onto the center of the pancake and gently break the yolks, spreading them across the top. This is a signature touch from Dongnae-style pancakes! The batter might seem a bit liquidy, so be patient and cook over low heat until the bottom is golden brown and firm. Carefully swirl the heavy cast-iron pan to check if the pancake moves freely. Once it does, gently flip it over to cook the other side until golden brown. (Handling a heavy pan requires some practice!)
