Quick & Spicy Meat Jeon Bokkeumbap (Fried Rice)
Super Simple Meat Jeon Fried Rice, Spiced Up with Cheongyang Pepper!
Looking for something light before heading to the gym, I rummaged through the fridge and found some pre-made meat jeon! I decided to make a super-simple fried rice using it and some leftover veggies. The usual richness of fried rice can sometimes be a bit much, but adding fiery Cheongyang peppers cut through that perfectly, making it deliciously spicy. Enjoy this tasty fried rice!
Main Ingredients- 3 pcs Pre-made Meat Jeon (Korean savory pancake)
- 1/2 Onion
- 1/4 Carrot
- 1/4 Zucchini
- 1 Cheongyang pepper (Korean chili pepper)
- 1 serving Cooked rice
Seasoning & Others- 1/2 Tbsp Oyster sauce
- Furikake (to taste)
- Canola oil (a little)

Cooking Instructions
Step 1
First, prepare the vegetables for the fried rice. Finely dice the onion, zucchini, and carrot. For an extra spicy kick, finely mince the Cheongyang pepper after removing the seeds. Slice the pre-made meat jeon into bite-sized pieces and set aside.
Step 2
Heat a little canola oil in a pan over medium heat. Add the sliced meat jeon and all the prepared vegetables. Stir-fry until the vegetables begin to soften. Then, add 1/2 tablespoon of oyster sauce and continue to stir-fry, ensuring the sauce coats everything well.
Step 3
Once the vegetables and meat jeon are partially cooked, add the serving of cooked rice to the pan. Use a spatula to break up any clumps and thoroughly mix the rice with the other ingredients. Continue to stir-fry until the rice grains are separated and slightly toasted.
Step 4
Finally, sprinkle a desired amount of furikake over the rice and give it a quick final stir. Your super simple and delicious Meat Jeon fried rice is ready! Enjoy this easy yet satisfying meal. ^^
