Ingredients

  • 2 Korean green chilies (adjust to your spice preference)
  • 2 bay leaves
  • 3-4 Vienna sausages
  • 1 handful spinach (about 50g)
  • 4-5 cloves garlic
  • 1 ripe tomato
  • Olive oil, as needed
  • 100g pasta (spaghetti or your favorite shape)
  • 1 Tbsp oyster sauce

Cooking Instructions

Start by cooking the pasta. Bring a large pot of salted water to a boil and cook your pasta according to package directions, aiming for al dente (about 8-10 minutes). While the pasta cooks, prepare your other ingredients. Finely chop the Korean green chilies, removing the seeds if you prefer less heat (or keep them if you like it spicier!). Thinly slice the garlic into slivers. Slice the Vienna sausages into rounds. Wash the spinach and pat it dry. To prepare the tomato, score the bottom with a cross, blanch it in boiling water for about 30 seconds, then transfer to an ice bath. Peel the tomato, then roughly chop or lightly blend it for the sauce.

Now, let’s build the flavor base. Heat a generous amount of olive oil in a large pan over medium-low heat. Add the bay leaves and let them infuse the oil with their aroma for a minute. Once fragrant, add the thinly sliced garlic and sauté until golden brown and aromatic. Be careful not to burn the garlic. Next, add the chopped Korean green chilies and sauté for another minute until fragrant. You’ll notice a pleasant spicy aroma.

Add the sliced Vienna sausages to the pan and sauté until they are lightly browned and slightly rendered. This will add a nice meaty flavor to the sauce.

Pour the blended tomato into the pan and let it simmer for a few minutes, allowing it to thicken slightly into a sauce. Then, add the spinach and stir until it wilts down into the sauce.

Drain the cooked pasta and add it directly to the pan with the sauce. Toss everything together vigorously – ‘shake it, shake it!’ – to coat the pasta evenly with the sauce and ingredients. For seasoning, you can use salt, but I prefer to add 1 tablespoon of oyster sauce for a rich umami flavor and a glossy finish. Continue to toss for about a minute until everything is well combined and heated through.
