Ingredients
  • 2 large eggs
  • 2 pinches of salt
  • 100g chives
  • 1 ripe tomato
  • 2 tablespoons sesame oil

Cooking Instructions

Step 1

First, crack 2 eggs into a bowl. Add 2 pinches of salt and whisk them together vigorously. This helps remove any eggy smell and seasons the eggs.

Step 2

Heat a non-stick frying pan over medium heat with a little cooking oil. Pour in the whisked egg mixture. Once the eggs are about 80% cooked, use chopsticks to gently stir and break them up, creating a scrambled egg texture. Avoid overcooking to maintain a tender consistency.

Step 3

While the eggs are cooking, wash and chop the tomato into bite-sized pieces. Trim and cut the chives into similar lengths. Preparing your vegetables while the eggs cook saves time.

Step 4

Add the chopped tomato and chives to the pan with the scrambled eggs. Drizzle in 2 tablespoons of sesame oil. Stir-fry everything together over medium heat until the vegetables are tender and well combined.

Step 5

Once you can smell the fragrant sesame oil and all the ingredients are nicely cooked, remove the pan from the heat. Serve immediately over rice or enjoy as a side dish. Your delicious Quick Tomato Chive and Egg Stir-fry is ready to eat!
