Versatile Doenjang Vegetable Stir-Fry

  • 1 cup Doenjang (Korean fermented soybean paste)
  • 1/2 block Tofu (firm, silken, or soft tofu)
  • 10-15 dried anchovies (heads removed, for broth)
  • 1/4 Zucchini
  • 2 Shiitake mushrooms
  • 1/4 Onion
  • 1 Korean chili pepper (Cheongyang pepper)
  • 1/4 Scallion

First, prepare the tofu. You can use any type of tofu you have on hand – firm, silken, or soft. The anchovies will be added while cooking. Since some people might not like the heads in their food, be sure to meticulously remove them before using.

Now, let’s use up those leftover vegetables in your refrigerator! I’m adding zucchini, shiitake mushrooms, and onion. The onion adds sweetness, while the zucchini and mushrooms contribute texture and flavor.

We’ll also add Korean chili pepper for a touch of heat and scallions for aroma. The spicy kick from the chili pepper pairs wonderfully with the doenjang, so I highly recommend including it. Instead of buying special ingredients, make the most of the vegetables you already have!

Place all the prepared ingredients into a pot and bring to a simmer. It’s crucial to add only a very small amount of water. The anchovies, tofu, and vegetables will release their natural moisture, creating a light broth. I’ve made it slightly thinner today since I’m mixing it with rice for bibimbap. If you plan to use it as a dipping sauce for wraps, you’ll want to cook it with minimal or no water, almost like stir-frying, for a richer flavor.
